I am very glad to be back home. When I arrived home I was greeted by happy faces. David heard me pull in the garage and opened the door to see if it was me, and then exclaimed “Mommyyyy!!”. Emma was sitting in the couch and started kicking her legs like she was running a race. She wouldn’t let me out of her sight the rest of the evening. Andrew was bursting with excitement, but managed to contain himself until after I was finished hugging the kids. 🙂
My dad’s birthday was Thursday. I was happy to see him and spend a little time with him on his birthday this year. My dad oversees the high school gym and activity center in the town where they live. It was basketball tournament week, and he had to work Thursday evening. However, he was able to take a dinner break. So I cooked him a fabulous, hearty, birthday dinner! I made chicken fried steak with gravy, mashed potatoes and green beans. My mom made a birthday cake. We enjoyed a birthday dinner together, and presents before he had to return to work. Later, Mom and I took him some cake. (By the way, my mom has always been very good at decorating cakes! She is so artistic, and can make the cake look so beautiful. She also happens to have the best hand writing of anyone I know, even on her cakes!)
I am very glad to have spent some time with Andrew yesterday evening and today! He has to leave again tomorrow after noon for another conference. (Boo-hoo!) Grand-mama is here! The kids were so happy when she arrived this afternoon!! It’s always wonderful to see their faces light up when they see their grandparents! Alesia is going to watch the kids for me while I teach Monday and Tuesday afternoon/evenings. I don’t know what I would do without her! I am very excited about teaching again this semester. I am going to be uploading some new material to my piano teaching pages soon!
I made enchiladas for dinner this evening. I love enchiladas! They are a little time consuming…BUT so worth the time! If you make enough of them, you can freeze the extras. I love when you can get two meals out of one! 🙂

Monday: Lunch, Chex chicken strips and french fries. Dinner, Pot roast, carrots and mashed potatoes.
Tuesday: Lunch, Spaghetti and salad. Dinner, Chicken enchilada soup.
Wednesday: Lunch, Roast beef sandwiches. Dinner, Hoppin’ John with cornbread and spinach salad.
Thursday: Lunch, Cheeseburgers and chips. Dinner, Roasted chicken thighs and potatoes, and green beans.
Friday: Lunch, Polish sausage, navy beans, and green peas. Dinner, Steak, roasted broccoli, and macaroni and cheese.
Saturday: Lunch, eat out. Dinner: Pizza and salad.
Sunday: Lunch, Turkey chili. Dinner: Hot wings, and grilled corn dip. (Super bowl)
