My Funny Valentine! Thursday, Feb. 15, 2018

Monday I made cupcakes for David’s valentine party at school. The rich chocolate batter tasted divine! The butter cream frosting was absolutely the best frosting I have EVER made!! (I will definitely be using that frosting recipe again!) I baked the cupcakes, took them out of the oven and let them cool. I then removed the cupcakes from the pan. As I was lifting them out I noticed they didn’t feel as squishy as they should. I was in denial about the fact that I had over baked them! I then went to work. When I returned home that evening with plans to frost them,  I thought, “Oh, they will be okay”. I frosted them, still not wanting to admit that I should toss them. I then tried one. This is where I had to face reality! The cupcakes were awful!!! They were hard and dry! BOO-HOO-HOO!!!! I had clearly over baked them by at least ten minutes. The next morning I sent Andrew to the local grocery store to buy cupcakes for David’s party, while I wallowed in self pity! Oh well, I am definitely going to try these again! Next time I will be super careful about how long the cupcakes are in the oven! 20180212_205624_HDR

David was so proud of his Valentine’s day box! He has had a blast the last couple days!

ROAR!

The first thing I heard on Valentine’s day was, “Happy Valentine’s Day mom!”. Andrew had already left the house for his early ash Wednesday service. I was in the shower, and I heard David’s little voice coming into the bathroom. He is so sweet! He was so excited about Valentine’s Day and his parties at school!

Here is a picture of the beautiful rose that Andrew bought me! It’s titled “Frosted” rose. It looks beautiful with my collection! 🙂

Andrew, Emma and I had a Valentine’s day lunch together yesterday! It was fun! We went to Outback, and I enjoyed a lobster tail, sirloin steak, and a baked potato! It was relaxing and great to stop and spend a little time together. Yesterday was actually a very long and busy day! (Plus, I am not yet feeling one hundred percent. I am still fighting this cold. Blah!) I made slow cooker lasagna for dinner yesterday evening! I put it together before Andrew and I met for lunch. I am sure glad I did! It made yesterday evening go a lot smoother! Andrew and I were both busy with Ash Wednesday services, and then I had choir rehearsal yesterday evening. Afterwards, Andrew had to leave for a quick trip to New York where he is doing some workshop stuff. He will be back late Friday night/early Saturday morning. I managed to snap a couple pictures with him before we all went our ways. Close your eyes if you don’t like PDA! 🙂
