Eating Healthy. April 5, 2019

A few weeks ago Andrew had a gallbladder attack. It wasn’t the first time that this has happened, but this time seemed more intense. The doctor of course told him he needed to have it taken out. We are trying to prevent that from happening by watching our diets. Andrew especially has been avoiding fried foods. This is a very difficult challenge, as we LOVE to eat catfish, bbq, steak, etc. We have still been eating those things, just not fried or as often. We have also been eating a lot of fish, such as tilapia and salmon. I have a really great blackened tilapia recipe that I found. I love the seasoning mix! In fact, I used it on some chicken today and it’s great on chicken too! Click here for the recipe forย Blackened Tilapia!ย I love tilapia! The texture of the fish is not too much different than catfish. It’s a tad flakier, and has a lighter taste in my opinion. It pairs well with broccoli and rice as side dishes.ย 20190402_182601

Andrew has been doing better by the way since we have been watching our diets. So far, no more attacks!

I had the pleasure of making some brunch recipes for our Bible study group this week! Every month we have a brunch gathering before our session, and it happened to be my turn to help this month. I made Pioneer Woman’s french toast bake as one of my dishes. This recipe is awesome, not healthy, but it tastes so good!! It’s almost like a bread pudding in texture. It’s super easy and convenient to make too. You prepare everything the night before, and then all you have to do is bake it the next morning. I love those kind of recipes! ๐Ÿ™‚ Here is the link to theย French Toast Bake!ย Sorry I forgot to take pictures! Scatterbrained me! ๐Ÿ™‚ The other dish I prepared was breakfast burritos. I also prepared these the night before, and then heated up the egg mixture, and stuffed and rolled them up in the morning. The good thing about breakfast burritos is you can put whatever you like in the egg filling. I used onions, peppers, sausage, bacon, and cheese!

We took the kids to the children’s museum Monday, and they had a blast as usual. Emma LOVES to ride the carousel, and we usually wait and ride it last before we leave the museum. I took Samuel on his first carousel ride! We sat on one of the benches. ๐Ÿ™‚

We then went to eat lunch after the museum. Look at all that cuteness at our table! ๐Ÿ™‚

Andrew took David to get his hair cut this week. You can tell the difference by looking at the picture of us above and then the one below! He needed it cut desperately! David loves his new haircut! Andrew took him one morning before school, and David’s teacher said she saw him catch a glimpse of himself in the mirror. He stopped and took a second look with the expression of, “Hey, I look pretty cool!” ! She said it was hilarious! ๐Ÿ™‚

We have had some beautiful weather days, and we have been loving the outdoors! I snapped a picture of the kids playing in the sandbox. (Samuel is watching of course. ๐Ÿ™‚ ) We have also had a few meals on our back porch already. I love our screened in porch! We can enjoy eating “outside” without the bugs! ๐Ÿ™‚

Look at this little guy! Samuel is able to roll over both ways! I love this picture! I have a picture of both David and Emma in this exact pose!

I decided to do a little throwback! The first is David, and Emma of course has the bow in her hair. I think Emma and Samuel look a lot a like. I just realized that I took both David and Emma outside for their pictures. Since the weather is getting nice, I need to do this with Samuel too! I will have to share it with you when I do. ๐Ÿ™‚
