Turkey Chili


3 tbls olive oil

1 medium yellow onion, chopped

5 cloves garlic, minced

1 tbls kosher salt

2 tsp chili powder

1 tsp dried oregano

1tbls tomato paste

1 chipotle chile en adobo, chopped with sauce

1pound ground turkey

2 cups chicken stock

1 14.5 oz can diced tomatoes

1 can black beans


Heat the olive oil in a large pot over medium high heat. Add the onion, garlic, salt, chili power, and oregano and cook for about three minutes. It will smell amazing! Stir in the tomato paste and the chipotle chili and sauce, and cook for about another minute. Add the turkey, breaking it up with a wooden spoon, and cook until the meat is cooked through. Add the stock, tomatoes, and beans. Brink to a boil and cook for about ten minutes. I like to serve with shredded colby jack cheese, sour cream, and tortilla chips!
